Scrap Burgers

Ultimate burger test: does juice run down to your elbow? Tick. These use up all the kids in the crisper who were never asked to dance this week.

Yields: 8 patties

Prep time: 25 minutes

Cook time: 20 minutes

INGREDIENTS

400g can chickpeas, including liquid

1 tsp garlic powder

1 tsp onion powder

1 tbsp dried oregano

1 tbsp finely chopped flat-leaf parsley leaves

2 tsp beef-style stock powder

1 tsp paprika

200g broccoli

1 - 2 beetroot, peeled

2 carrots

225g halloumi, grated

1/4 cup plain flour

4 tbsp panko breadcrumbs

canola oil, for frying

To serve (optional)

toasted bread rolls, mustard, shredded lettuce, pickles, charred onions, BBQ or tomato sauce

METHOD

In a food processor, blend the chickpeas - aquafaba (liquid) and all - with the garlic and onion powders, oregano, parsley, stock powder and paprika until it is chunky smooth. Place this into a large mixing bowl.

Chop the vegetables into manageable pieces of about 3 - 4cm and place in a food processor a few cups at a time to blitz until they are chopped quite fine.

Add the blitzed veg to the chickpea mix along with the grated halloumi, flour and panko crumbs and stir well to combine. The mix should resemble a mushy, thick paste, one you can form into patties of about 1/3 cup each.

Cook on a preheated flatgrill BBQ or frying pan that has been brushed with oil for about 5 minutes on each side. They will become crisp and brown. Be careful as you flip to ensure they don't break up.

Enjoy them as you would a burger, rissole, meatball … do as you wish. It's Friday after all.

HINTS

You can change the veg - you just need about 500 - 550g of hearty discard. Think cauli, 'shrooms, parsnip, beans, sweet potato … etc.

Shut the front door … no, no seriously. You'll need to fire up the BBQ for this baby and you don't want the couch to smell funny.

Be careful as you flip to ensure they don't break up.
