Fridge Giver San Choy Bau
You eat this with your hands which, I can proudly say, my team of heathens is all about. The end-of-week floppy carrot, the bag of bok choy you had grand plans for, the straggly beans and half a brocc head all have a home here.
Serves: 6
Prep time: 20 minutes
Cook time: 20 minutes
INGREDIENTS
1 onion, chopped or grated
2 carrots, chopped or grated
2 heads bok choy, finely chopped
1 small head broccoli, finely chopped
handful of green beans, finely chopped
1 tbsp olive oil
500g pork mince
5cm knob ginger, peeled and grated
3 garlic cloves, finely chopped
4 spring onions, chopped
1 tsp mirin
3 tbsp hoisin sauce
3 tsp soy sauce
1 tbsp sesame oil
100g vermicelli noodles, soaked in boiling water, drained and snipped with scissors into 2cm lengths
iceberg lettuce cups or frozen pancakes*, to serve
Optional
oyster sauce, fried noodles and more chopped spring onion
*Available in the freezer section of Asian supermarkets.
METHOD
Saute all the chopped vegetables in the oil until tender, then set aside in a big serving bowl.
Saute the pork mince with the ginger, garlic and spring onion until golden.
Add the mirin, hoisin, soy and sesame oil and toss to coat well.
Put the pork mixture and noodles into the bowl with the veg and mix well.
You can eat this with cutlery, but it's infinitely more fun to scoop it into edible vessels like lettuce and pancakes to munch immediately.
HINTS
This is the sir-mix-a-lot of wonder. You can add bamboo shoots, water chestnuts, peanuts. Form your own band here. You pretty much can't go wrong at all.
You're just looking for about 5 cups of chopped veg in total.
Frozen pancakes are available in the freezer section of Asian supermarkets.
