One Pan Saucy Sausage

A very quick one pan dinner that all goes in the oven, so you don't have to stand at the stove stirring or doing anything. Serve with rice, pasta, on a jacket potato, with roast potatoes, or even just with crunchy bread.

Serves: 4

Prep time: 10 minutes

Cook time: 40 minutes

INGREDIENTS

1/2 red onion, chopped

1/2 red capsicum (or 1 small one), finely chopped

250g punnet cherry tomatoes, halved

8 stems fresh oregano

8 good quality beef sausages (I use gluten free ones from my butcher)

2 tbsp olive oil

salt and pepper

4 garlic cloves, crushed

1 cup jarred tomato pasta sauce (or a can of crushed tomatoes)

3/4 cup cream

60g bag baby spinach (or the next size up)

To serve

grated parmesan

chilli flakes

lemon wedges

METHOD

Preheat the oven to 200C.

Throw the onion, capsicum, cherry tomatoes and oregano into a heavy-based ovenproof pan. Chop the sausages into rough 1.5 - 2cm chunks - you can snip them with scissors, cut them with a knife, or take the skin off and just dollop the flesh in, totally up to you. Add them to the pan and toss with the olive oil, salt and pepper.

Roast, uncovered, for about 15 minutes. Remove from the oven, stir in the garlic and give the sausages a stir too, so you get some more charry bits on top. Return to the oven for another 15 minutes.

Blend the tomato sauce, then whisk it together with the cream. Pour it into the pan and return to the oven for another 10 minutes to bubble and simmer away.

Pull it out, add the baby spinach, then cover and set aside until you're ready to eat.

Serve with rice, pasta, on a jacket potato, with roast potatoes or just with crunchy bread. I had a small bowl of it with parmesan cheese, a few chilli flakes and a squeeze of lemon.

HINTS

No jarred tomato sauce? A can of crushed tomatoes works just as well.

Use really good quality beef sausages - mine are from my butcher and don't have any gluten, so they're a great option.

It holds well covered on the stove, so you can make it ahead for people to come back to.
