Green Goddess Potatoes

A CO-STAR side - super crispy, glassy-edged smashed potatoes and charred broccoli piled high on a beautiful green goddess dressing. Serve alongside any kind of grilled meat.

Serves: 6 as a side

Prep time: 20 minutes

Cook time: 1 hour 20 minutes

INGREDIENTS

For the potatoes and broccoli

2kg baby potatoes

Olive oil

1 head broccoli, cut into florets

2 tbsp grated parmesan

Salt and pepper

For the green goddess dressing

1/3 cup Greek yoghurt

2 cups mixed herbs (I used spring onions, coriander, thyme, oregano and mint)

1 garlic clove

Salt

1 tsp white wine vinegar

1 - 2 tsp capers

400g can white beans, drained

2 tbsp Meredith goat's cheese

METHOD

Preheat the oven to 200C. Boil the potatoes until tender, then drain.

Heat some olive oil in a roasting pan until hot. Place the potatoes in the pan and squash until flat, then toss so both sides are oiled, or drizzle a little olive oil back on top. Roast for about 40 minutes, turning once, until golden and crisp.

Meanwhile, blend together the yoghurt, herbs, garlic, salt, vinegar, capers, white beans and goat's cheese until it's as smooth as you like.

Toss the broccoli in a little olive oil and the parmesan, just to toss through. Nestle it all around the potatoes, turn the oven up to 220C and roast for another 15 - 20 minutes, until charred and golden.

To serve, pour the green goddess dressing onto the base of your platter and pile high with the super crispy, glassy-edged potatoes and the charred broccoli. Season and serve alongside any kind of grilled meat.

HINTS

Make sure the oil is hot before the potatoes go into the pan - that's where the crispy, glassy edges come from.

Use whatever mix of soft herbs you have for the dressing - I used spring onions, coriander, thyme, oregano and mint.

This is made to sit next to any kind of grilled meat, so it's an easy one to bring along to a barbecue.
