Frittato With Zucchini
A big golden tray of potato, zucchini and herby eggs under melty cheese - warm or cold, it never misses.

INGREDIENTS
3 large potatoes (big, fat, and dirty), boiled until tender, peeled and roughly chopped
5 eggs
1/2 cup (125ml) single (pure) cream
1 onion, thinly sliced
1/4 cup (80ml) olive oil, divided
2 small zucchinis, thinly sliced
1 tablespoon sea salt
1 tablespoon chilli flakes
1 tablespoon chopped oregano
1 tablespoon chopped thyme
1/4 cup (80g) goat's curd
large handful of grated or sliced mozzarella
asparagus or salad, for serving (optional)
METHOD
Preheat the oven to 180C.
Whisk together the eggs and cream in a bowl.
In a pan over low heat, pan-fry the onion slices in 2 tablespoons of the olive oil until soft. You can use the baking pan you intend to use for baking to save on dishes.
In a low-sided baking tin (about 35cm x 25cm) or a flameproof casserole dish, combine the chopped potatoes, zucchini slices, sauteed onion (including the oil), sea salt, chilli flakes, oregano and thyme.
Pour the egg and cream mixture over the potato-zucchini mixture in the tin.
Place little dollops of goat's curd over the top, then evenly distribute the mozzarella over the dish.
Bake for 30 minutes or until the frittata is set and the cheese is melted and slightly golden.
Serve warm or cold - warm seems to make time stand still in a delightful way.
Optionally, serve with asparagus or a side salad.
HINTS
This is the retirement plan for leftover boiled potatoes - if you have them, dinner just got 20 minutes shorter.
Waxy potatoes hold their shape best, but honestly whatever is in the pantry works.
Cold slices are lunchbox gold the next day - wrap them and thank yourself at noon.
