Angry Eggs & Greasy Bouncers

Jammy eggs with a spicy salt hat and buttery fried cheese-toastie soldiers - breakfast for dinner, done properly.

INGREDIENTS

1 teaspoon sea salt flakes

1/4 teaspoon garlic powder

1/4 teaspoon cayenne pepper

4 slices white bread

30g cheddar cheese, grated or cut into 4 slices

3 tablespoons butter, melted

4 x 6-minute eggs


METHOD

Combine the salt, garlic powder and cayenne in a small bowl. Set aside.

Top two slices of bread with half the cheese each. Top with the remaining bread slices and brush the tops with half the butter.

Heat a large non-stick frying pan over medium heat and add the sandwiches. Fry for 2 minutes, until golden underneath. Brush the tops with the remaining melted butter. Flip the sandwiches and fry the other sides for 2 minutes, until golden.

Remove the crusts from two sides of each sandwich and then divide into three fat soldiers.

Crack the tops off the eggs and sprinkle them with the spicy salt mix.

Eat immediately.

HINTS

For a proper 6-minute egg: fridge-cold eggs into rolling boiling water, exactly 6 minutes, straight into egg cups - the yolk stays molten for dipping.

No egg cups? Shot glasses or the egg carton with the bottoms trimmed will hold them steady.

The spicy salt makes more than you need - keep the rest for popcorn, avo toast or the next round of eggs.
