INGREDIENTS
200 ml strong brewed earl grey tea (we used 2 tbs twinning earl grey) (0.8 metric cup or 6.76 Fl Oz)
300 ml cloudy apple juice (1.2 metric cup, 10.14 fl oz)
200 ml vodka (0.8 metric cup or 6.76 Fl Oz)
100 ml apple liqueur (0.4 metric cup or 3.38)
2 tbs lemon juice (30ml or 1.01 fl oz)
2 tbs honey (30ml or 1.01 fl oz)
2 bottles/ 1.5ltr prosecco (6 metric c or 50.42 fl oz)
Ice to serve
1 apple thinly sliced to garnish
6 strawberries thinly sliced to garnish
METHOD
Steep tea in water that has been brought to 80’c and allow to cool. (a cooler water temp prevents bitterness in the tea)
Combine the apple juice, vodka, apple liqueur, lemon juice and honey in a large jug.
Strain tea into the mixture and stir well with a spoon.
Add half the sliced strawberries and apples.
Crush the ice in the food processor in batches of 2 cups at a time, and fill glasses.
Add 60 ml of punch per glass and top with 100 ml prosecco.
Garnish with apple and strawberry.
Do the ice ahead of time and store in a ziplock bag in the fridge.
Make the punch mixture the morning of serving, but no sooner as the juices can oxidise.
