SuperGreens Lasagne

Layer upon layer of zucchini, herby green ricotta, pesto and cheesy bechamel - the lasagne that ate its greens so everyone else will too.

INGREDIENTS

8 zucchini, thinly sliced

400g fresh lasagne sheets, blanched, oiled and kept in cold water

olive oil, for drizzling

1/2 cup freshly made pesto (not with cashews)

For the bechamel sauce

50g butter

3 tablespoons flour

1 litre milk

250g grated cheddar

salt and pepper, to taste

For the green ricotta mixture

200g fresh spinach

a bunch of dill

a bunch of parsley

2 garlic cloves

2 tubs of ricotta (about 500g)

1 1/2 small slabs of feta (about 300g)

3 spring onions


METHOD

Preheat the oven to 180C.

For the bechamel, saute the butter and flour until golden. Gradually add the milk while whisking. Add the cheese, combine well, and season with salt and pepper.

In a food processor, combine the fresh spinach, dill, parsley, garlic, ricotta, feta and spring onions. Blend until you have a smooth green paste.

Drizzle olive oil in an ovenproof dish.

Start layering: place one sheet of fresh lasagne, add a single layer of thinly sliced zucchini, drizzle with the pesto, and dot with bechamel. Top with lasagne sheets, spread a layer of the green ricotta mixture and cover with more lasagne sheets. Repeat the process until all ingredients are used, finishing with a layer of zucchini, pesto, and a thick layer of bechamel.

Bake for about 45 minutes or until the lasagne is bubbling and golden.

Let it sit for at least 15 to 20 minutes before serving. Have with a salad, or not, because it's already got you there.

HINTS

The blanch-oil-cold water routine keeps the fresh sheets slippery and workable instead of welding themselves into one super-sheet.

Slice the zucchini properly thin (mandoline territory) so it cooks through in step with everything else.

The rest before serving is non-negotiable - 15 to 20 minutes turns slop into slabs - and it freezes brilliantly in portions.
