Summer Mushroom Spaghetti

Fast, easy, and the only "cooking" is boiling water, which is level 1 guys, you can do it!

Serves: 4

Prep time: 15 minutes, plus 1 hour marinating

Cook time: 10 minutes


INGREDIENTS

500g button mushrooms, very finely sliced

2 garlic cloves, crushed

1 cup curly parsley, leaves finely chopped, tightly packed

1-2 teaspoons dried chilli (optional)

1 tablespoon sea salt flakes

1/2 teaspoon sugar

2 tablespoons white wine vinegar

500g spaghetti

1/3 cup olive oil, plus more for serving

1 cup freshly grated parmesan, plus more to serve

1 tablespoon lemon zest (about 1 lemon)


METHOD

In a large serving bowl (big enough to hold the pasta once cooked*), combine the mushrooms, garlic, parsley, chilli - if using - salt, sugar, white wine vinegar and olive oil.

Cover and allow to marinate for 1 hour or until the mushrooms have softened.

Add the parmesan to the mushrooms and toss well.

Meanwhile, bring heavily salted water to the boil and cook the pasta until al dente according to packet directions. Tong the pasta directly into the bowl of mushrooms and toss to combine.

Add a spoonful of pasta water if needed.

Top with cheese and a big drizzle of olive oil.

Serve while warm, but not hot... as it's summer.

* If you don't have a big serving bowl, just combine in a smaller mixing bowl, then when you get to tossing the mush with the pasta, do this step in the pasta saucepan and serve into individual bowls.

HINTS

The marinating hour is doing the cooking - the salt and vinegar soften the raw mushrooms into something silky and savoury.

I make these mushies for pizza so often and find myself just picking at the bowl - make a double batch and you've sorted tomorrow's pizza night too.

If your kids are AS anti 'shrooms as mine, just forgo them - give the kids the spaghetti tossed in the garlicky dressing and moan with delight as they miss out on the joy.
