Spicy Goddess

I know. What a ridiculous recipe. But it won't be once you've tried it - a creamy avocado, lime and jalapeño sauce for absolutely everything.

Serves: Makes 1 ½ cups

INGREDIENTS

flesh from 2 avocados

3 tbsp lime juice

a baby fist of coriander leaves, chopped

1-2 tbsp jalapeño chillies (depending on how much heat you like)

1 tbsp olive oil

1 tbsp sea salt

2 spring onions, chopped


METHOD

Blend everything until smooth.

Store in the fridge for up to a week.

To make a non-spicy version, remove the chilli but replace it with 1 tablespoon of white wine vinegar.

HINTS

Press a little extra olive oil or plastic wrap onto the surface before it goes in the fridge to keep it from browning.

The salt quantity looks bold but it's what makes this sing - trust it, then adjust to taste.

Use it as a dip, a dressing thinned with a little water, or a dollop over eggs, tacos and grilled meat.
