Slap Sauce

Using up overripe stuff - an easy, flavourful jar of summer sunshine to turn to when you need it. The perfect pizza sauce, ready to go.

INGREDIENTS

1 capsicum

1/2 onion

1-2 tomatoes

1 tin tomatoes

2 garlic cloves

olive oil

salt

oregano


METHOD

Blitz everything together into a smooth sauce.

This is the perfect pizza sauce - all the right flavours ready to go.

You could also use a tin's worth in a baked pasta instead of passata, or marinate a chook in it, or of course throw it through some spaghetti last minute with some added chilli.

HINTS

This is a rescue mission for overripe capsicum, tomatoes and onion - the softer and sadder they are, the sweeter the sauce.

It's a pizza base, a pasta sauce and a marinade all in one jar, so make a big batch when the crisper is overflowing.

Add chilli at the point of use rather than to the base, so the same jar can feed the kids and the heat-seekers.
