Browned butter, dark chocolate chunks, and a dough log that lives in your freezer for emergencies. Cookie insurance.

Serves: 24

Prep time: 20 minutes, plus 30 minutes chilling

Cook time: 10-12 minutes


INGREDIENTS

180g butter (reduces to about 150g once browned)

1 cup brown sugar

1 cup white sugar

1 egg, plus 1 egg yolk

1 tablespoon vanilla extract

1 1/2 cups plain flour

1 teaspoon bicarbonate of soda

1 teaspoon salt

180g dark chocolate (look for one with almonds through it), roughly chopped into chunks


METHOD

Place both sugars in a large heatproof bowl.

Brown the butter in a saucepan over medium heat for about 10 minutes, or until it turns golden brown - watch closely so it doesn't burn.

Pour the browned butter directly over the sugars and stir to combine. Set aside to cool.

Meanwhile, lightly whisk the egg, egg yolk and vanilla in a small bowl, and chop the chocolate.

Pour the egg mixture into the sugar-butter mixture in 2-3 batches, stirring well between each addition until smooth and glossy.

Sift the flour, bicarbonate of soda and salt directly into the bowl and combine well.

Add the chocolate chunks and mix until evenly distributed.

Place the dough on a large sheet of baking paper and shape into a log about 30cm long and 10cm in diameter. Wrap the paper around the log and twist to seal both ends.

Chill in the fridge for at least 30 minutes, or fast-chill in the freezer for 15 minutes.

To cook: preheat the oven to 180C. Cut the log into 1.5cm thick discs and place on a paper-lined baking tray, leaving about 4cm between each one.

Bake for 10-12 minutes, or until the edges start to brown.

Allow to cool to a safe temperature before serving.

HINTS

Use your hands to massage the chocolate chunks through the dough for even distribution.

Swap the dark chocolate for any chocolate you love.

Freeze half the log so a fresh batch is always one slice-and-bake away.
