One-Pan Steak, Broccoli & Shrooms

Charred broccoli, a red wine and mushroom cream sauce, and a steak you slice straight back into the pan. Dinner for two, no extra dishes.

INGREDIENTS

1 head broccoli, cut into florets with long stems

1 tbsp olive oil

2 scotch fillet steaks, butcher-cut, about 3cm thick, oiled and seasoned with salt

50g butter

100g field or forest mushrooms, chopped

salt and pepper, for seasoning

1/2 cup red wine

1 cup pure cream


METHOD

Heat a large pan over medium-high heat with the olive oil. Pan-fry the broccoli for about 5 minutes, until it begins to char at the edges. Remove and set aside on a plate.

In the same pan, fry the steaks for about 4 minutes on each side for medium-rare. Once cooked, remove and rest for 4 minutes.

Add the butter and chopped mushrooms to the same pan and fry for 2 minutes, until golden. Season generously with salt and pepper.

Deglaze the pan with the red wine and let it simmer for 1 minute.

Reduce the heat to medium-low, add the cream and stir well. Bring to a gentle simmer.

Slice the steaks and return them to the pan along with the charred broccoli. Gently toss everything in the sauce until evenly coated. For steak cooked more through, let it simmer in the sauce a little longer.

Once everything is heated through and well combined, bring the pan straight to the table.

HINTS

Resting the steak before slicing keeps it juicy, even though it's going straight back into a hot sauce afterwards.

Char the broccoli properly before setting it aside - that bit of bitterness balances the richness of the cream sauce.

This is genuinely a one-pan meal - there's no need to clean between steps, since the leftover bits in the pan only add flavour.
