Miso Maple Peanut Wings

Sticky miso, maple and lemongrass wings with a peanut dipping sauce made from the end of the peanut butter jar. Delicious with steamed rice and Asian greens, or just on their own as the perfect messy snack.

Serves: 4-6

Prep time: 15 minutes

Cook time: 40 minutes

INGREDIENTS

For the wings

2kg chicken wings

1 lemongrass stalk, white end only, chopped

4 garlic cloves

2 tbsp white (shiro) miso

2 tbsp maple syrup

1 tbsp curry powder

juice of 1 lime

1/4 cup Kewpie mayonnaise

For the peanut dipping sauce

1/4 cup crunchy peanut butter

1 tbsp white (shiro) miso

1 tbsp maple syrup

juice of 1 lime

boiling water

To serve

spring onions, sliced

lime wedges

steamed rice and Asian greens (optional)

METHOD

Preheat the oven to 200C fan-forced.

Make a pan liner for your roasting tray. Even if you've got a big tray, lay 2 sheets of foil together and fold-roll them along one side, so it opens out to a double-width sheet of foil. Line the tray with that, then a sheet of baking paper. This will just help you not have a sticky, messy pan to clean.

Blend the lemongrass, garlic, miso, maple syrup, curry powder and lime juice together, then stir in the Kewpie mayonnaise. Toss the wings in the sauce.

Spread the wings over the lined tray and roast for about 20 minutes. Take them out, turn them all, and roast for another 20 minutes.

Meanwhile, for the peanut dipping sauce, add the miso, maple syrup and lime juice to the peanut butter with a splash of boiling water, and give it a good stir until it's reasonably smooth. Pour into a bowl for dipping.

Sprinkle the wings with spring onions and serve with lime wedges and the peanut sauce for dipping.

HINTS

The double-width foil and baking paper liner is the trick for a clean tray at the end - you can see how clean it is in the video.

Use up a leftover jar of peanut butter for the dipping sauce. I had about 1/4 cup of crunchy left in mine, so I just made the sauce in the jar.

Serve with steamed rice and Asian greens for dinner, or on their own as the perfect messy snack.
