Mexican Seasoning

A warm, smoky all-purpose Mexican spice blend to keep in the pantry for tacos, beans, roast veg and beyond.

Serves: Makes about ½ cup

INGREDIENTS

2 tbsp dried oregano

2 tbsp chilli flakes

1 1/2 tbsp ground cumin

1 tbsp ground coriander seeds

2 tsp ground cinnamon

1 tbsp garlic powder

1 tbsp onion powder


METHOD

Combine all the spices in a bowl and mix well.

Store in an airtight container for up to 3 weeks.

HINTS

Make a double batch while you're at it - it disappears faster than you'd think once it's within reach.

Toast the blend briefly in a dry pan just before using for a deeper, rounder flavour.

Adjust the chilli flakes up or down to set the heat level to suit your table.
