Lunchbox Scones

A great easy way to use up things in the fridge and get something tasty and delicious into the lunchbox. No tin, no rolling, just an ice cream scoop and a tray.

Serves: 9, depending on the size of your ice cream scoop

Prep time: 20 minutes

Cook time: 25 minutes

INGREDIENTS

1 zucchini, grated, about 1 cup

sea salt

1 cup grated mozzarella

1 cup chickpeas, about half a tin or a bit more

1 cup chopped ham

3 cups flour

1 teaspoon baking powder

1/2 teaspoon bicarb soda

50g butter

1 garlic clove

milk, enough to bring the butter up to 250ml

2 eggs

salt and pepper

METHOD

Preheat the oven to 200C fan forced and line a tray with baking paper.

Toss the grated zucchini in sea salt and set aside.

Fold the chickpeas into a piece of baking paper and crush them with the back of a spoon or a meat mallet. They don't have to be perfectly mashed.

In a bowl, combine the flour, baking powder and bicarb soda, and whisk to combine.

Melt the butter with the garlic clove, then add enough milk to bring it up to 250ml. Whisk in the eggs.

Stir the wet ingredients through the dry.

Add the zucchini, mozzarella, crushed chickpeas and ham, and season.

Use an ice cream scoop to scoop the mixture directly onto the lined tray.

Bake for 25 minutes, rotating the tray once.

VARIATIONS

Mix and match whatever you have. Salami, capsicum, carrot, feta, tuna, chopped spinach or defrosted frozen spinach. Basil or any type of herb that you like.

HINTS

Whisk the eggs into the butter and milk before any of it goes near the flour. I forgot this and trying to combine the eggs later was difficult.

Crushing the chickpeas inside a fold of baking paper keeps them off the bench and off you. The back of a spoon or a meat mallet both work, and they do not need to be perfectly mashed - a bit of texture is good.

An ice cream scoop gives you even sizes, which matters because they all need to come out at the same time. Rotate the tray once at the halfway mark.
