Everyday Lemon Parmesan Dressing

My standard, hands-down favourite - the jar of dressing that transcends European borders so no one gets feisty.

Makes: About ¾ cup

INGREDIENTS

1 lemon, juiced

1 teaspoon Dijon mustard

pinch of sugar

pinch of salt

couple of grinds of pepper

1 garlic clove, broken

1/4 cup parmesan, grated

1/2 cup extra virgin olive oil

1 herb of your choice (chives, basil, whatever you like)


METHOD

Put everything in a jar.

Shake it up.

HINTS

The broken garlic clove flavours the dressing without overwhelming it - fish it out before serving, or leave it in for a stronger hit the longer it sits.

Add whatever soft herb you've got going - chives, basil, dill - it transcends European borders so no one really gets feisty.

Keeps in the jar in the fridge for a few days; shake again before each use as it separates.
