Curry Lime Coconut Chicken Noodles

Gently poached chicken in an aromatic coconut curry broth, ladled over soft rice noodles with fresh greens, herbs and a squeeze of lime.

INGREDIENTS

4 small chicken breasts

4 spring onions, roughly chopped

1 stalk lemongrass, smashed

1 piece ginger, roughly chopped

3 kaffir lime leaves, torn

1 tsp curry powder

1L vegetable or chicken stock

270ml coconut cream

2 tsp fish sauce

1 tbsp brown sugar

juice of 2 limes

1 packet rice noodles

500g mixed greens (snow peas, beans, carrots, zucchini)

fresh coriander, basil, chilli crisp and fresh lime, to serve (optional)


METHOD

In a large deep frypan, dry fry the spring onions, lemongrass, ginger, kaffir lime leaves and curry powder for about a minute until aromatic.

Add 700ml of the stock and simmer for about 10 minutes until fragrant.

Stir in the coconut cream and mix well.

Gently place the chicken breasts into the poaching liquid, reduce the heat, cover and simmer for about 12 minutes.

Remove the chicken and set aside to rest before slicing into 1cm pieces.

Remove as many aromatics from the liquid as you can, then season with the fish sauce, lime and sugar.

Meanwhile, soften the rice noodles with boiling water until tender.

Right before serving, add the greens to the coconut sauce to briefly poach.

Divide the noodles among bowls, add the sliced chicken and poached vegetables, and a ladle of sauce.

Top with fresh coriander, basil, chilli crisp and fresh lime.

HINTS

Poaching the chicken gently rather than boiling keeps it tender and silky - keep the liquid at a bare simmer.

Fish out the big aromatics before serving so no one gets a mouthful of lemongrass or lime leaf.

Add the greens at the very last minute so they stay bright and just-tender in the hot broth.
