Cheese Stuffed Burgers

A molten cheese surprise hiding in the middle of every patty. Smash it flat, let it ooze, no apologies.

INGREDIENTS

1/3 cup panko breadcrumbs

1/4 cup milk

600g regular beef mince

1 brown onion, finely chopped

1 garlic clove, crushed

2 tbsp finely chopped parsley

2 tbsp finely chopped oregano

1 egg

100g cheese of your choice, sliced

4 burger buns

beetroot, to serve

tomato, to serve

lettuce, to serve

barbecue sauce, to serve

tomato sauce, to serve

mayonnaise, to serve


METHOD

Soak the panko breadcrumbs and milk together in a bowl and set aside for 10 minutes to soften.

In a separate bowl, combine the beef mince, chopped onion, crushed garlic, parsley and oregano.

Add the egg and the softened panko mixture to the beef mixture and combine thoroughly.

Divide the mixture into 4 and shape into patties.

Press about 25g of cheese into the centre of each patty, then fold the mince around it to fully encase the cheese.

Heat a pan over medium-high heat with a little oil. Cook the patties until golden and crispy on both sides, about 5 minutes per side. Rest briefly.

Grill the burger buns.

Build each burger with your favourite fillings - beetroot, tomato, lettuce, barbecue sauce, tomato sauce and mayonnaise - then top with the patty and the other bun half.

Press down firmly to squash it flat before serving.

HINTS

Make sure the mince fully encases the cheese with no gaps, or it'll leak out during cooking instead of staying molten inside.

These patties freeze well uncooked - just separate with baking paper and freeze flat.

Resist flipping the patties too early - let them properly sear on one side first for the best crust.
