Buttermilk & Chive Dressing

A tangy, herby buttermilk dressing that comes together in one shake of a jar - creamy without being heavy.

Makes: About 1 ½ cups

INGREDIENTS

2/3 cup buttermilk

1/2 cup Greek yoghurt

1 lemon, juiced and zested

1 garlic clove, cracked

2 tablespoons extra virgin olive oil

1/4 cup chives, finely sliced

salt and pepper


METHOD

Put all the ingredients into a jar with a lid.

Secure the lid and shake vigorously to combine.

Add to salads when needed. Store in the fridge for a week.

HINTS

Cracking the garlic rather than mincing it gives a gentle background note - fish it out before serving if you want it milder still.

This is the creamy foil to a sharp vinaigrette - it loves crisp lettuce, chicken, potatoes and anything charred off the barbecue.

It keeps for a week; give it a shake each time as the buttermilk separates.
