Breakfast Tacos

Cheese melted straight onto the tortillas in the oven, soft folded eggs, and a corn, bacon and avocado salsa that does the work of three condiments.

Serves: 4, makes 5 tacos

INGREDIENTS

3 rashers bacon

4 eggs

1 tablespoon milk

20g butter

420g canned corn kernels, drained

1 avocado

2 1/2 tablespoons extra virgin olive oil

1/2 bunch coriander

1 lime

1/2 bunch large leaf rocket

1 tablespoon green chilli habanero sauce, or any chilli sauce

5 tortillas

1 cup grated cheddar

salt and pepper


METHOD

Preheat the oven to 200C.

Remove the rind from the bacon, then cut into 1.5cm strips. Add to a large frying pan over high heat and cook for 5 minutes.

Meanwhile, crack the eggs into a bowl, add the milk and whisk to combine. Set aside.

Add the corn to the pan, reduce the heat to medium and cook for a further 3 minutes.

Meanwhile, remove the pit from the avocado and finely dice the flesh. Pick the coriander leaves and finely dice the stalks. Zest half the lime and juice the same half, then cut the remaining half into wedges. Place into a bowl and season with a pinch of salt. Stir in 2 tablespoons of the olive oil and the chilli sauce, or to taste.

Add the corn and bacon to the avocado and mix well.

On a large tray, lay the tortillas out separately and sprinkle over the grated cheese. Place in the oven for 5 minutes, or until the cheese has melted.

Return the same pan to the heat and reduce to low. Add the butter and the remaining olive oil. Once the butter is starting to sizzle, add the eggs and fold gently until just set.

Top the cheesy tortillas with the egg, bacon, corn and avocado salsa. Add the coriander and rocket and serve with lime wedges.

HINTS

Melting the cheese onto the tortillas in the oven glues everything together and stops the whole thing collapsing in your hand.

Fold the eggs gently over low heat and pull them while they still look slightly underdone. They set on the way to the table.

Use the same pan for the bacon, the corn and then the eggs. The bacon fat is doing free seasoning work.
