Beef Flank Enchiladas

Charred flank steak, a chunky tomato salsa, and a stack of taco shells doing their best impression of a backyard grill night.

INGREDIENTS

500g flank steak

salt, for seasoning

Old Bay seasoning mix

1-2 tomatoes, roughly chopped

1 spring onion, roughly chopped

1/4 bunch coriander stalks, roughly chopped

1/2 tsp sea salt

1 tbsp olive oil

1 tsp vinegar

2 avocados, sliced

lime juice, to taste

Tajin chilli powder, to taste

8 taco shells

cheese, shredded, to serve

sour cream, to serve

lettuce, shredded, to serve

1 small onion, sliced, to serve

tomato salsa, to serve

chilli, to serve


METHOD

Season the flank steak generously with salt and Old Bay seasoning on all sides. Bring to room temperature while preheating the barbecue to very hot.

Grill the steak on both sides for 5-7 minutes, until charred on the outside but still rare in the middle. Set aside to rest.

In a small food chopper, combine the chopped tomatoes, spring onion, coriander stalks, sea salt, olive oil and vinegar. Blitz to a chunky, mushy consistency. Set aside.

Slice the avocados and season with lime juice and Tajin chilli powder.

Warm the taco shells in a pan or over a naked flame, flipping to char each side slightly.

Slice the rested steak thinly.

Assemble the tacos, topping each shell with cheese, sour cream, shredded lettuce, sliced onion, flank steak, avocado, tomato salsa and your chilli of choice.

HINTS

Resting the steak before slicing keeps it juicy - don't skip this step even if you're hungry.

Adjust the grilling time to suit how you like your steak done.

Don't skip the lime juice and Tajin on the avocado - it adds a proper burst of flavour against the richness of the steak.
