You know when you have 4 brown bananas left over and you could weep, s you google banana cake and it irritatingly calls for 1 brown banana. Not this recipe. It can sort your 4 smooshy scumbags! Plus, you can adapt it easily towards playlunch OR party its ridiculous.

Instructions

  1. Preheat the oven to 180 fan bake.
  2. Line 12 cup muffin tin with paper cases.
  3. You can use a stand mixer or a hand beater for this.
  4. Start by placing the peeled banas in the bowl along with butter, sugar and salt.
  5. Beat these until smooth, then add the egg and continue to beat until fully combined.
  6. Use a spoon or very low speed to mix through the flour until just combined.
  7. Mix in the s[prinkles the same way, gently wit stand mixer or with spoon.
  8. If the bananas are small and you need more liquid add upto 2 tbs of milk and mix well.
  9. Use two spoons or an ice cream scopp to ¾ fill each cupcake case.
  10. Place into the oven and cook for 20-25min until golden and puffed.
  11. Remove from oven and cool on a rack before storing in an airproof container.

Notes

TIPS or CHANGES

To make it healthier:

  • Change to wholemeal self raising flour.
  • Add ½ cup sultanas instead of sprinkles (or chopped walnuts!)
  • Reduce sugar to ½ cup
  • Substitute sugar with honey or maple
  • Add ¼ cup oats with the flour
  • Add 1 grated carrot at the start
  • Top with oats and a sprinkle of sugar before baking


Party plus?

  • Keep the sprinkles
  • Ice with cream cheese or butter cream
  • Burrow cut the top off and fill with whipped cream and jam
  • Put a marshmallow in the centre before baking
  • Stir through choc chips instead of sprinkles
