Angel Hair & Tomato Sunshine

Grated ripe tomatoes macerated in olive oil and basil, tossed through angel hair with tonnes of cheese - no-cook sauce, pure sunshine.

INGREDIENTS

5 large ripe tomatoes

1 garlic clove, smashed

1 shallot, finely chopped

1 teaspoon sea salt flakes

1 teaspoon white sugar

1/4 cup (7g) loosely packed basil leaves, chopped

1 tablespoon red wine vinegar

1/4 cup (60ml) extra virgin olive oil

500g angel hair pasta

1/4 cup (25g) finely grated parmesan cheese


METHOD

Cut the toms in half and grate the flesh into a bowl. Macerate with all that other good stuff: garlic, shallot, salt, sugar, basil, red wine vinegar and olive oil.

Cook the pasta, then toss through the toms and tonnes of cheese.

HINTS

This recipe lives and dies on the tomatoes - save it for the ripest, softest, height-of-summer ones.

Grate the cut side of each tomato half against a box grater and the skin becomes a little glove protecting your hand - discard it when you're done.

Let the tomatoes macerate while the pasta water boils and the pasta cooks - even 15 minutes deepens the sauce enormously.
